Finally used the last of the ground turkey. I think it will be a while before I have the bravery to try it again. It gets a little better each time, but I really prefer the beef. I didn’t use the cinnamon, and I didn’t measure all the ingredients because I always like to adjust the recipes.

Doesn’t look the picture on the site, but it’s still delicious. I would love to know the secrets of the food photographers. I’ve heard some interesting things about their work.

Taco Pizza

One of the things I like to do when we have leftovers is put them on a pizza like the Hawaiian I made with the holiday ham. This time we had taco leftovers but no more tortillas or shells to put the ingredients in. We did however, have some pizza staples.

– pizza crust
– pizza sauce
– salsa added to the pizza sauce
– corn
– onion
– ground beef cooked in taco seasoning
– Mexican blend shredded cheese

Taco PizzaMy husband and I agreed that this was reaaaaally good and that we should start making special pizzas more often. I’m looking forward to it because I have lots of ideas already.

Beef Strogranoff

Beef Stroganoff

Ok, so maybe it’s not super photogenic, but I love this beef stroganoff. It’s yummy and so easy.

– 1lb ground beef
– 1 packet (Lipton) onion soup mix
– 16 oz sour cream
– 1 can cream of mushroom condensed soup
– mushrooms
– egg noodles

1. Cook noodles according to directions on package.
2. Brown ground beef in onion soup mix. Add mushrooms. Add sour cream and soup. Serve over noodles.

No Noodle Vegetable Lasagna

Vegetable lasagna

My sister recommended this veggie lasagna recipe from A Year of Slow Cooking after she made it herself on her roommate’s crockpot and told me how much she enjoyed it. I salted the eggplant and squash and let out some of the water first, and I didn’t really measure the ingredients according to the recipe and just put in what seemed good. It turned out really well, and I would recommend it. Since we still have some vegetables left because I didn’t put it all in, I think I’ll add them to spaghetti, which I like a lot better with vegetables (and meat), too, now that I’ve tried it. Yay for learning to like vegetables. I think I’ve been doing pretty well so far. Oh yes, and I didn’t put the top layer of cheese on until five minutes before we were going to eat.

When we “don’t have anything to eat,” I scrounge up what I can from the fridge and pantry and just start putting things that can go together. This is very Filipino to just add whatever leftover ingredients you have and add it to what you’re making. I’ve been told this is how raisins have become part of certain dinner recipes and why Filipinos make ketchup out of bananas (bananas are plentiful, maybe tomatoes are not).

We got a 10-pack of boxed macaroni and cheese in the pantry from Sam’s Club “in case of emergency,” and we eat it when we run out of food and don’t want to go to the store. I like to mix it up since just the plain mac and cheese in a box isn’t that great unless you’re a kid, and it gets old pretty fast. Actually, our kid isn’t a fan of it, and it’s really surprising since I thought all kids did. She prefers Filipino food with lasagna as the exception.

Cheeseburger Macaroni:
– macaroni and cheese
– ground beef browned in onion soup mix
– shredded cheese
– tomato

It would’ve been even better if we had bacon. Next time.

2011 New Year’s Resolutions

Last new year’s eve. Cady and I both brought pajamas to the party and were wearing them by 10pm. We went home before midnight and probably will do the same this year.

Well, I guess I started thinking about New Year’s Resolutions even earlier this year (a couple weeks before Thanksgiving) than last year. What can I say? I get excited by the new start. I was looking over my list from last year, and I’ve decided that some goals just won’t get done, which is fine. Some goals were also kind of vague, but that’s okay. Some of my new ones are, too.
I have an even bigger, more ambitious list for this new year:

– cook new recipes and learn Filipino cooking
– sew, crochet, other crafts, and Silhouette machine projects
– cake/cupcake decorating
– get out more and explore fun things to do in the area
– improve photography skills, photograph daily (and sometimes, be in more of the photos)
– take more family videos
– take dogs to dog park, spend more quality time with them
– give Cady more opportunities to play with other kids
– learn how use Photoshop and to install and use Photoshop actions
– go to church at least once a week
– work on decreasing “Real Age” (eating red meat once a week or less, eating fish more than once a week, flossing, exercise, taking a multi-vitamin daily, eating better)
– post tutorials and recipes on the blog
– spend time with mommy friends (I’ve been a hermit unless Tim was taking me somewhere)
– write to my sponsor child every month and mail letter in a timely manner

Chicken Wings

These wings were made from a recipe for drummettes that I got here at Tried and Trues. They were so easy and so good. I didn’t know how the russian dressing would taste since I had never had it, and here it would be mixed with marmalade, but once the smells started coming from the kitchen, I knew it would be great.

Grocery Store Samples = Easy New Meal Ideas

We’re pretty big suckers for samples and have a tendancy to buy the products we taste when we’re at the grocery store. I like trying new things when it comes to food and get bored eating the same stuff all the time. We’ve tried new kinds of juice, bread, gumbo ingredients, cheese, and more. I consider it a good thing because sometimes we need more meal ideas, and being able to try something first helps us decide whether or not we’d like to make it ourselves at home. Plus, it doesn’t hurt that the recipes are always super easy to make.

Today I made “Hot Pepper Raspberry Chipotle” hot wings using a simple rub on the wings before frying them and a sauce that we put on after letting them sit for a bit on some paper towels (both from HEB). So easy and tasty. Two things that are important to me when I’m cooking.

I love fried chicken.

Slow Cooker Tex Mex Chicken

I got this recipe from Tried and True who got it from Kraft Foods, and it is SO GOOD!

I’ve made this a couple times now and highly recommend it.
